Gluten & Sugar Free Fat Bombs

Hey guys. We’re going gluten free again. ๐Ÿ˜ฆ ๐Ÿ˜ฆ I remembered once more how hard it is to make gluten free things taste “normal”. I made breadsticks last night and they tasted fine, but man, they were dense and crumbly. ALAS, FOR DAYS FULL OF GLUTEN FILLED FOOOOOODS. XD

A few days ago, I was looking for easy low sugar no-flour dessert recipes. XD I came across Keto Fat Bombs (yyyyyyuuuuuuummmm). I had made those before, but decided to make up my own recipe (I guess I was in a creative mood XD). The measurements may be off because I didn’t measure anything but I’ll do my best to guess. XD

I think they turned out okay and they are SUPER easy to make. ENJOY! ๐Ÿ˜‰

Sugar Free Gluten Free Fat Bombs

8 oz cream cheese
1/3 cup peanut butter
3 tbsp heavy cream
4 “squirts” of liquid stevia (or to taste)
1 tbsp vanilla
1 tsp instant coffee
3/4 cup coarsely ground oats
3/4 cup sugar free chocolate (coarsely ground)

In a small bowl, place cream cheese, peanut butter, heavy cream and stevia. Using a whisk or a hand blender, combine until smooth.
Combine the instant coffee and vanilla until the coffee is dissolved.
Add coffee mixture to cream cheese mixture and combine.
Add ground oats and mix.
Drop tablespoon blobs of the mixture into the chocolate crumbles and coat it entirely. Repeate until finished.
Place in freezer for 1-2 hours or until they are firm to the touch.
Most importantly….EAT! ๐Ÿ˜‰

Uh. I also took several pictures only to realize too late (aka after the fat bombs were long gone) that my camera didn’t have the memory card in and thus saved none of my pictures. ๐Ÿ˜‘

  1. I’ve been GF for like 6 years! (since I was 7) I’m actually allergic to it. ๐Ÿ˜ well I might not be allergic to it but either that or my body just HATES the way we (not us but companies) process it. ๐Ÿ˜…๐Ÿ˜…

      1. yea. going GF in 2nd grade was not easy. ๐Ÿ˜‚ but it’s a lot easier now! I have found many food/snacks I can eat! (I’m still searching for a decent Sandwhich bread that I don’t have to toast. because I seriously miss PB&J.) ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚

  2. I’m also like almost Dairy Free. I think it’s another processing thing. if I eat it @ home I’m typically fine, but at a restaurant โ€ฆ it’s bad. actually I just get sick anytime I eat out. even GF and Dairy Free…..

  3. This will be great! I have celiac disease, basically meaning I can’t have gluten – I havn’t had gluten for nine years! ๐Ÿ˜… – So this will be the perfect next dessert for me to make. ๐Ÿ˜ I also have an allergy to chicken eggs, but I can use duck eggs as a substitute. ๐Ÿ˜‹

  4. I’ve been gluten-free for 14 years. I stay away from dairy most of the time, too. It took a long time to get over not being able to eat all the tasty desserts at the holidays. But I’ve developed new tastes and found some things that are delicious.
    Question: can you taste the coffee in this recipe? Cuz I’m not a coffee lover…

    1. Oh wow, that is a long time to be GF! What are some of your favorite GF and dairy free foods?
      The coffee flavor isn’t terribly strong in this recipe, but you could just leave it out all together if you don’t like the taste. ๐Ÿ™‚

      1. 1.Orgain Organic Vegan Plant-based protein powder, chocolate flavor, in a smoothie with strawberries, banana, apples or grapes, blueberries, and a bit of cucumber.
        2.The rice cakes sold at Dollar tree – they’re thin and pressed tight so they’re more like a cracker, spread with peanut butter or to make a roast beef sandwich with Kraft horseradish sauce.
        3.Corn chips with black beans, salsa, and guacamole.
        4. Double chocolate brownies (Betty Crocker makes a good mix.
        5.(Their chocolate chip cookies are good as well.)
        6.Bob’s Red Mill pancake mix with egg and soy or almond milk, spread pancakes with Smuckers plum or cherry jam.
        7. Thai red curry with rice, (lowest spice because of heartburn๐Ÿ˜ฃ)
        8. Dark chocolate covered almonds
        9. Honey-roasted peanuts
        10. Baked chicken thighs with mashed potatoes (using soy milk, Earth Balance, white pepper and salt), gravy made with chicken broth and corn starch.
        Both Aldi and Kroger have a GF bread that tastes really good warmed in the microwave and spread with Earth Balance and the same jam I use on pancakes.
