Howdy people. Whoa, did I just say howdy? I promised never to use that as a greeting. XD Anyway, I was looking through my drafts this morning in hopes of finding something acceptable to post because I am WAY too tired to try to write anything original. XD I slept until ten thirty. *dies* But I was awake very late last night, so I’m using that as an excuse. We went on a day trip to house hunt and didn’t get back until one AM.

Right. Cheesecake. I love cheesecake so much. It’s one of my favorite desserts. There are so many things that you can do to and with it. Add nutella or fruit or LEMON CURD!!! Lemon curd is THE BEST. Although the last time I made it, it tasted really bad because I ignored the instructions and used a metal spoon to stir it instead of a silicone one. *sighs sadly*
I actually made this recipe back in *thinks through the past few months of my life* uh, I think it was April or May. We had no sugar in de house, so I substituted. XD This is a completely sugar free, cookie dough cheese cake. Cookie dough is SO good. It is another one of my favorite desserts. Which means that I make it a lot. I’m beginning to wonder if people are getting tired of it…I should expand my horizons. XD
I’m rambling again, aren’t I? Woops. I’ll let you guys get on to the recipe. 😉 Sadly, I don’t have a picture of the actual thing. Although maybe that’s a good thing because, if I remember correctly, it turned out looking really bad. XD

Sugar Free Cookie Dough Cheese Cake Recipe
Serves: 8-10
Cookie Dough
½ cup of butter (one stick) softened
2 tablespoons of milk
1 tablespoon of vanilla (yeah, I like a lot of vanilla XD)
15 drops of stevia and a bit of monk fruit (or preferred sweetener)
1 ¼ cup of flour
1 tsp. of salt
1 cup of sugar free chocolate chips
Crust
1 ½ cups of crumbled sugar free cookie crumbs
4 tablespoons of butter melted
Cheese Cake
16 oz of cream cheese (two packages) softened
2 eggs
½ a cup of half & half or milk
1 tablespoon of vanilla
15 drops of stevia and a bit of monk fruit (or preferred sweetener)
2 tablespoons of flour
Preheat oven to 355. While it’s heating up, make the cookie dough.
For the cookie dough
Mix the softened butter with the milk, egg, vanilla. Add sweetener and stir to combine. Add flour and salt. Mix. Add chocolate chips. Scoop tsp. size balls onto a plate and put them into the freezer while you work on the rest of the cheesecake.
For the crust
Combine cookie crumbs with melted butter. Take your pie pan and pat the crust evenly into the bottom. Bake at 355 for six minutes. Then take it out and set aside.
For the cheese cake filling
Combine cream cheese, eggs, half&half, and vanilla. Add sweetener and flour. Stir until combined.
Assembly
Take the cookie dough out of the freezer and add the balls into the cheese cake mixture. Stir gently. Pour the whole thing into the prepared crust and put into preheated oven to bake for 50 minutes. Take it out and let it cool completely before eating. Add some whipped cream to the top and enjoy!
Notes
- To keep the top of the cheesecake from browning, cover the pan with tinfoil.
- To help the cheese cake cool faster, place it in the fridge for a while. Keep any leftovers in the fridge as well. 😉

Ooh YUM!! I’ve never made cheesecake (I want to now though 😝) but I adore all treats cheesecake-flavored. Not the same obviously, but close. 😂

Yep, I made it. I basically just put together different colors and shapes to make it. XD Jehosheba and I have been doing it for years. XD It’s really fun!
